During the vegetarian season, the dinner table is filled with the vibrant colors of fresh vegetables, making for a beautiful presentation.

Wash and slice all the vegetables. Julienne the carrot and cut the bok choy into sections. Smash the ginger and sauté it in oil in a pan, then add the vegetables and stir-fry evenly.

Cut the fried tofu into pieces. Add to the pan with the vegetables and season to taste.

Add the bok choy. When the vegetables are tender, mix 2 tablespoons cornstarch with a little water and pour into the pan, stirring well. Turn off the heat and sprinkle with toasted sesame seeds. Serve hot and enjoy the colorful vegetable dish!
