And with an air fryer oven, you can turn out big perfect bagels for pennies a piece.

Ingredients

1 1/2 hours to make dough, boil, bake, cool.
2 people, 5 bagels
  1. 220grams, 1 cup, red hard winter wheat kernels, ground three times, makes two cups of durum fine grade hard wheat flour. Or buy fine ground durum wheat flour
  2. 3 TspBaking powder
  3. 1/2 TspFine seasalt
  4. 1 cupfresh thick greek yoghurt, room temperature, make or buy
  5. 1/2 Tspflaked Maldon or kosher seasalt
  6. 1/2 Tspwhite sesame seeds
  7. Equipment: mixer, flour attachment, dough hook, dutch oven to make greek yoghurt, ladle and wok to boil bagels, air fryer oven
  8. Cost: one cup hard wheat makes 2 cups flour, 25 cents. Yoghurt, home made, other ingredients, 50 cents. Per bagel, 15 cents

Cooking Instructions

1 1/2 hours to make dough, boil, bake, cool.

    Grind hard wheat 3 times from spelt flour to very fine flour, about 15 minutes.

    Put flour, baking powder and salt in doughmaker with dough hook, run till smooth, add greek yoghurt, mix till smooth ball, about 10 minutes. Makes 20 ounces. Roll into five balls, punch hole in center with thumb, smooth out to donut shape.. Rest few minutes. Makes five donuts, 4 ounces each.

    Lower bagels in large wok in rolling boiling water, boil 2 minutes till they float, flip, boil 1 1/2 minute other side, lay on air fryer oven rack.

    Sprinkle flaked SeaSalt or sesame seeds on exterior top of bagel, bake 20 minutes in 400F degree oven.

    Cool half an hour before slicing. Bagels stay chewy when frozen. Enjoy.
