Ingredients

12 waffles
  • 3 1/3 cupsall-purpose flour (about 400 grams)
  • 3large eggs
  • 1 2/3 cupswhole milk (about 400 ml)
  • 7 tablespoonssugar (about 90 grams)
  • 5 tablespoonsmelted butter (about 70 grams)
  • 1/2 cupshredded coconut (about 50 grams)
  • A fewdrops of pandan extract

    In a bowl, whisk together the eggs, sugar, milk, melted butter, and shredded coconut until well combined. Gradually sift in the flour, mixing until you have a smooth batter. Add a few drops of pandan extract and let the batter rest for 15 minutes.

    Preheat your waffle maker. Pour a spoonful of batter into the waffle iron and spread evenly. Cook for about 5 minutes, or until both sides are golden brown, then remove the waffle.

    Repeat with the remaining batter. If you have leftovers, store the waffles in an airtight container.
