In a bowl, whisk together the eggs, sugar, milk, melted butter, and shredded coconut until well combined. Gradually sift in the flour, mixing until you have a smooth batter. Add a few drops of pandan extract and let the batter rest for 15 minutes.

Preheat your waffle maker. Pour a spoonful of batter into the waffle iron and spread evenly. Cook for about 5 minutes, or until both sides are golden brown, then remove the waffle.

Repeat with the remaining batter. If you have leftovers, store the waffles in an airtight container.
