Warm aubergine salad with giantwholewheat couscous and smoked cheese
Amazing eggplants accompanied by summer vegetables and spices, very tasty.

Steps

Cut eggplants, tomatoes and sweet peppers into large cubes. Chop the garlic with a knife.

Pour some olive oil into a frying pan. Fry the eggplants until half-cooked, over medium heat.

Add tomatoes, salt, ground black pepper and garlic. Simmer everything together for about three minutes.

Add sweet pepper, reduce heat, cover pan with lid. After one minute turn off stove.
- 5
Boil the couscous, thinly slice the cheese and green onions.
- 6
Serve the vegetables with the couscous, top with cheese and sprinkle with green onions.
