Heat oil in a Cooker, add mustard seeds.
When mustard begins to crackle, add curry leaves.

Add Chopped Onions, Brinjal and add pinch of salt.

Add Chopped tomatoes.

Sauté it for 6 to 7 minutes.

Add red Chili Powder.
Mix everything well.

Finally add water to your required consistency & close the lid.

Close the lid...and pressure cook for 3 to 4 whistles on medium flame...

Open the lid. Stir occasionally...wait till remaining water to evaporate.

Finally, Serve with Crispy Dosa.
