Steps

Wash potatoes and poke on all sides with a fork. Place in air fryer/ baking tray with parchment paper. Add over 2 tsp/10ml of olive oil and salt/ pepper to taste. Mix around to coat all sides.

Put into pre-heated over at 190c/375f for 1 hour until golden/ soft.

Chop up onion. Microplane garlic to make a paste. Chop up jalapeno. Optionally chop up 12g of parsley.

Use a high rimmed pot on medium high heat, add in 11/2 tablespoons (30ml) olive oil. Sautee for 3 minutes. Add in garlic and jalapeno plus seasalt. Cook for 1 minute constantly stirring.

Add in the beef, mixing for 6-7 minutes until brown all over.

Add in 1 tbsp (18g) tomato paste, 2 tsp (5g) ground cumin, 2 tsp (4g) dried oregano, 1tsp (2.5g) smoked paprika, 1/2 tsp (1g) Cayenne Pepper, sea salt and black pepper.

Mix well for 2 minutes. Then add 3/4 cup (180ml beefstock) mix for 1 minute while mixing through.

Add in can of crushed tomatoes + water to get all out of can. Bring to boil, reduce to low, add lid and cook for 25 minutes.

Remove potatoes from the oven and allow to cool for 10 - 15 minutes once done.

Remove lid from the chilli and stir. Add in can of rinsed kidney beans and parsley if using, then remove from the heat.

Cut potatoes length ways and push sides to fluff the insides. Add chilli inside and top with cheese. Add the rest of the chilli to the potatoes evenly.

Add spring onion and top with sriracha mayo/ peri peri mayo once reheated to serve.
