Vietnamese Grilled Rice Paper (Bánh Tráng Nướng)

This grilled rice paper snack is my daughter's favorite—she loves it so much, it’s become a meal for her instead of just a snack. Traditionally, it uses dried tiny shrimp, but since we ran out, I substituted pork floss, which is just as flavorful and delicious!

Heat a skillet and lightly coat with butter or cooking oil. Place a sheet of rice paper in the pan and press it down so it doesn’t curl up. Beat the egg, then use a spoon to spread it evenly over the rice paper. Thinly slice the Spam and spread it evenly on top, along with pork floss and green onion.

Spread a little mayonnaise and chili sauce on top. Fold the rice paper in half and cook both sides until crispy.

Let cool—the rice paper will stay crispy.
