White Parwal is a variant of the Green one. It is pale White in colour and has a similar taste to that of the Green variety. Mostly known as Pointed Gourd, Parwal is the Hindi name for it and is also known by various other names according to the different regions in the Country.
It is rich in Vitamins, Minerals and Fiber. It aids in weight management, controls blood sugar and promotes digestion. It boosts heart, immune, skin, respiratory, kidney and gastrointestinal health. Being already rich in Vitamins like A, C, B1, B2, it is also bestowed with modest levels of other B-complex groups of Vitamins like Pantothenic Acid, Riboflavin and Minerals like Calcium.
All in all a very healthy Vegetable that packs several nutrients that are good for maintaining a healthy lifestyle. This simple fry is such a wonderful option for any day. Be it a Breakfast or other meals of the day, it is absolutely a good choice. It can be combined with other Vegetables too for a change and relished with both Rice and Rotis.

In a pan, heat some oil and add the ginger garlic paste. Fry it for a few seconds and then add in the asafoetida. Now add chopped onions too. Saute these on a low heat until done. Now add the cubed potatoes. Give them all a proper mix.

Cover and cook on a low flame for 15-18 minutes. Do not add too much of water. Add a little to facilitate easy cooking of the potatoes as required. I added just a little of it. It will be done very easily. It's done in just about 15 minutes or so since the potatoes are cut into smaller cubes or triangles whichever is convenient.

Just as the potatoes are done, add in the sliced pointed gourd or parwal. Also add in all the powdered spices too. Cover and cook for about 8-10 minutes more so that it soaks in the flavours. Do not over cook it and retain it's crunch. Adjust salt as needed. Pointed gourd gets done quickly.

Relish this awesome dish well garnished with chopped coriander leaves and serve hot as a delicious side dish to many an important meals. Yum! Enjoy!
