It is very nutritious vegetable which is available only in the monsoon season in India. this is a typical Gujarati style sabji, uniquely flavoured by garlic and roasted besan.

It is very nutritious vegetable which is available only in the monsoon season in India. this is a typical Gujarati style sabji, uniquely flavoured by garlic and roasted besan.
Steps

Wash and clean kantola. Trim top pointley part and slice length wise into thin slice.

Heat oil in a kadai, add carom seeds, asafoetida, garlic slice and stir it well.

Add turmeric powder, cut kantola and salt, mix it well. Cover the lid, let kantola sweat.

Roast besan in a 1 tsp oil, keep aside.

After 10 minutes check kantola pieces.It should be 80 % cooked. Now add red chilli powder, cumin coriander powder and roasted besan.

Mix all ingredients well. Again cover and continue cooking. When kantola besan sabji is ready serve with ' phulka roti or Bajra rotla.

It's tasty and delicious sabji.
