Dry out the braised tofu for 30 minutes by keeping it under something heavy

Cut tofu into cubes (not too small or they may break apart)

Mix yogurt, spices, corn starch and a bit of oil. Coat the tofu evenly and let it marinate for 20-25 minutes

Heat up the oil and let it coat the pan. Add curry leaves to splutter. Gently add tofu and fry on each side till golden brown. Use a kitchen towel to absorb excess oil from the tofu

Garnish with lemon juice and finely chopped coriander
Tips
Can also replace tofu with 200g paneer
