This recipe is very easy to make; in fact, the chicken is just a piece of rotisserie chicken I had in the fridge. It's quick and simple.

If you have leftover rotisserie chicken breast (or if you have fresh chicken breast, you can cook it with a clove of garlic, a piece of onion, and some salt), shred the chicken and place it in a skillet with a little oil and the sliced onion. Season with salt and pepper to taste.

Once the chicken is seasoned, heat the tortilla on a griddle or skillet. When it starts to get some color, add the cheese. When the cheese begins to melt, add the seasoned chicken.

Place everything in the center of the tortilla and fold it into thirds, like a pamphlet. This gives it a nice presentation.

Once your quesadilla is ready, serve it on a plate with sour cream and avocado. You can also add your favorite salsa. Be creative with your presentation and you'll find the dish even more appetizing.
