Coconut Cream Thumbprint Shortbread Cookies

This is a family favorite shortbread cookie but with a coconut chocolate cream center for a burst of creamy coconut in a crisp cookie

Ingredients

  1. 12 ounces (3 sticks)unsaltedbitter, at room temperature
  2. 1 cupgranulated sugar
  3. 1 teaspoonvanilla extract
  4. 1/2 teaspoonalmond extract
  5. 3 1/2 cupall purpose flour
  6. 1/2 teaspoonsalt
  7. 1large egg beaten lightly woth 1 tablespoon butter (egg wash)
  8. 7 ouncessweetened flaked coconut
  9. about 24 Lindt coconut cream chocolate eggs
  10. 7

Cooking Instructions

  1. 1

    Preheat the oven to 350. Line cookie sheets with parchment papet

  2. 2

    In a large bowl beat butter and sugar until creamy

  3. 3

    Beat in extracts,salt and flour until it comes together

  4. 4

    Roll into 1 1/2 inch balls

  5. 5

    Have coconut on a platev

  6. 6

    Dip cookie ball in egg wash

  7. 7

    Roll in coconut

  8. 8

    Place on prepared pans and bake 18 to 25 minutes until golden

  9. 9

    As soon as the cookies come out of the oven gently press a coconut egg in the center. Cool n on racks

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
