Cooking Instructions
- 1
Remove the skin out and fillet the chicken half through the meat and butterfly them.Using the knife pierce all over the meat.
- 2
Add the seasonings into the mixing bowl (oyster sauce, sesame oil, sugar and salt) along with the chicken.Mix them evenly and marinate at least 20 mins or overnight in the fridge is the best to let them absorb the seasonings.
- 3
Grill them until golden brown.I cooked them in the Halogen oven at 175 C. 20 mins and flip another side, cook more 5 mins.
- 4
Diced the mango fruit into cubes and coarsely chopped shallots, parsleys or corianders.
- 5
Dice the green apples into small cubes.I picked the Granny Smith.
- 6
Dice the tomato or red bell pepper.I removed all the seed, the jello inside but skins and flesh.
- 7
Gently mix all the fruits, chopped corianders or parsleys and shallots.Squeeze lime juice along with a pinch of salt to bring out more flavour of those fresh fruits.
- 8
Put the grilled chicken steak along with the salsa on a plate and enjoy!!

Mexican Rubbed Steak w/ Chorizo Potatoes & Mango Habanero Salsa Mexican Rubbed Steak w/ Chorizo Potatoes & Mango Habanero Salsa
My family and I are huge steak lovers and we are lovers of Mexican cuisine. So we have tried to meld 2 of our loves together with this Mexican Steak dish. The steak has a Mexican rub with a few more aromatics added to it. It is cooked like a fine dining steak with the butter basting with a few different herbs and spices added to kick up the Mexican flavor of the dish. I added 2 sauces: mango habanero and a chili sauce, and it has chorizo potatoes, chili corn, and a jicama & fennel slaw for the sides. There is a lot of things going on in the plate so the ingredients and steps are quite a bit but the taste makes it all worth it at the end. Spice Mix -

Who doesn't love Stake? BTW, Did you know Kansas city, Missouri is the stake and BBQ capital of the world? But that doesn't mean that every cut of meat is char-grilled or hickory smoked. My version (pan-sauteed)is a great option if outdoor cooking is out of the question. Enjoy. vic.love3 -

Grilled Mahi Tacos with Pineapple Mango Salsa Grilled Mahi Tacos with Pineapple Mango Salsa
The star of this leftover wonder is the salsa. I was just hungry for fresh. Fresh something. I had a small pineapple from my yard and some jalapeño from our pepper plants. I was trying to use up things that were going south. So we fired up the grill and had a feast. SherryRandall: The Leftover Chronicles
