I tried to make sushi rice last night and mistakenly added too much water, so the rice ended up way too mushy. Thankfully there are several delicious ways to use overcooked rice, including this rice pudding I made for breakfast this morning. #zerowaste

I tried to make sushi rice last night and mistakenly added too much water, so the rice ended up way too mushy. Thankfully there are several delicious ways to use overcooked rice, including this rice pudding I made for breakfast this morning. #zerowaste

Add overcooked rice to a saucepan, add coconut milk, sweetener, vanilla extract.

Heat over medium heat, add salt and spices if using.

Heat the mixture until thickened about 5-7 minutes. Stir continuously to stop the rice from sticking to the bottom.

Taste and add sweetener or spices depending on your preference.

When thickened, transfer to a bowl and add desired toppings.
