Ingredients

  1. 4 cupsovercooked rice
  2. 1 cancoconut milk
  3. Pinchsalt
  4. 3-4 tablespoonshoney or maple syrup
  5. 1 tspvanilla extract
  6. 1 tsp(or to taste) cinnamon
  7. Optional: 1 tsp cardamom
  8. Toppings
  9. Blueberry jam
  10. Fresh berries
  11. Nigella seeds or sesame seeds
  12. Toasted nuts

Steps

    Add overcooked rice to a saucepan, add coconut milk, sweetener, vanilla extract.

    Heat over medium heat, add salt and spices if using.

    Heat the mixture until thickened about 5-7 minutes. Stir continuously to stop the rice from sticking to the bottom.

    Taste and add sweetener or spices depending on your preference.

    When thickened, transfer to a bowl and add desired toppings.

Lovely! Also intrigued by the nigella seeds. I’ve only used nigella seeds for savory foods so looking forward to trying it on sweet dishes. 👍🙌
