Daikon Radish with Shiitake Mushrooms and Snow Peas

My Chinese Mother-in-Law graciously shared this recipe with me during a recent visit. My family likes it mildly spicy, but you can dial down the spice level to suit your tastes.
Daikon is low in calories and high in many nutrients, including vitamin C and folate. This dish is delicious and quite healthy!
NOTE: Do NOT eat shiitake mushrooms raw. There is a slight risk of developing a rash. See the Notes Section below for more info.

Prepare all the vegetables:
🔹 Wash and peel the daikon radish. Cut it into large chunks (about 1.5” to 2 “ wide).
🔹 Wash the snow peas, then cut off their stems. Remove the fibrous strings on both sides.
🔹 Gently wash the mushrooms and wipe them with a paper towel to remove any dirt. Cut them into thick slices.
🔹 Mince the garlic (or pass it through a garlic press).

Have the other ingredients nearby and ready to use.

Bring a large pot of water to boil on the stove.

Blanch the snow peas by putting them into the boiling water for 1 minute. Scoop them out and place them in a colander to drain.

Blanch the shiitake mushrooms by putting them into the boiling water for 2 minutes. They will cook more once they are added to the dish later.

In a large, flat-bottomed pot or a large wok, sauté the minced garlic in a Tablespoon of neutral oil over medium-low heat for one minute or until slightly softened.
Add the daikon radish to the pot and mix well to coat with the oil and garlic. - 7
Add 3/4 cup water to the pot, then cover and steam the radish for 15 minutes, or until the pieces are tender.

Add 1/4 cup oyster sauce, 3 tablespoons shaoxing wine, and 2 heaping Tablespoons chili garlic sauce. Toss the daikon to mix and fully coat it with the sauce.

Add the shiitake mushrooms, mix, cover, and cook for an additional 3 to 4 minutes.

Slice the green onions thinly.
Add the snow peas and the green onions to the pot, and stir. - 11
Taste and adjust the salt and/or spice, then serve!

Notes:
Do NOT eat Shiitake mushrooms raw. Doing so can cause an intensely itchy dermatitis (rash) that lasts 2 to 3 weeks. This rash occurs in only about 1.8% of the population, so you likely won’t experience it. However, to be safe, only consume shiitake mushrooms fully cooked.
