Preheat the oven to 400°F (200°C).

If your salmon is in one piece, cut it into equal portions, about 6 oz (170 grams) each. If your piece is larger, cut it into pieces to make about 6 servings.

Place the salmon on a baking sheet lined with aluminum foil. Drizzle with olive oil and season with salt and pepper. Bake for 12–16 minutes, depending on the thickness of the fillets, until lightly browned. When the internal temperature reaches about 135°F (57.2°C), remove from the oven and let rest until it reaches 145°F (62.8°C), which is the safe temperature for cooked salmon.

While the salmon is baking, mix together all the ingredients for the dill sauce. Set aside. Once the salmon is cooked to your liking, spoon the dill sauce over the top.

Garnish with lemon slices if desired and serve with a quinoa salad, couscous, or rice. Enjoy!
