Steps

In a pot bring water to a boil, add in your pasta and cook according to package instructions.

Wash and clean the shrimps.
Set aside. - 3
Crack the eggs in a bowl and whisk it lightly. Season with some salt.

Heat some oil in a pan and cook the eggs. Remove and set aside.

In a pan sautee the onions and garlic until fragrant, add in the shrimps and cook for 3-4 mins. Add the carrots and cajun seasonings and mix well, cook until carrots are tender. Season with salt and pepper.

Drain the pasta and add to the shrimp, mix well and adjust the seasonings if needed.

Garnish with coriander before serving.

You can also add cheese if you like your pasta creamy and cheesy.
