An amazing easy to do Curry or Sabzi for everyday meals. It's absolutely refreshing, colourful and appealing. Not to forget, a way lot delicious and delightful plus healthy too for mealtimes. It goes well with both Rotis and Rice.
It's infact a perfect choice for Pooris too. Actually it's a great Winter Curry with all the fresh and flavourful Vegetables.
I make this often and keep changing the Vegetables to make it more flavourful and look different each time.
Children would love it too. Potatoes are a universal favourite and are the most loved by the children too. So I use them extensively in every dish that is made for them. This way you are much relaxed even with the most fussy Children too.

In a pan, heat some oil and add the ginger garlic paste. Saute it for a few seconds and then add in the asafoetida and the other ingredients as well. Saute onions on a low heat with all the powdered spices until done. And then add in the potatoes first. Cook for 8-10 minutes until soft or fork tender.

Next add the cauliflower florets and the capsicum cubes. Cover and cook on a low flame for 10-12 minutes. Do not over cook it. It should retain the crunch. It will be done easily. Cook it for a little longer duration if you prefer it too soft. Otherwise it is done in just about 15-18 minutes in all. The whole curry will be ready in 25-30 minutes.

Garnish with chopped coriander leaves and serve hot as a delicious side dish to many an important meals. Yum! Serve it hot right away alongside both rice and rotis. It tastes good with both. Enjoy!
