Cheesy Potato & Mackerel Pancakes

I know Potato Pancakes such as Hash Browns are not healthy food but I love them. I try to create less unhealthy Potato Pancakes by adding Vegetables OR mashed Chickpeas, etc. Today I added a can of Mackerel and Cheese to this one. These Pancakes are high in calories but seriously delicious. You got to try it if you love Mackerel.
Cheesy Potato & Mackerel Pancakes

Peel Potato and coarsely grate it. Remove excess water and place in a mixing bowl.

Add finely chopped Spring Onion, Egg, Salt, Pepper (OR Chilli) and Self-Raising Flour, and mix well. Add Mackerel and Cheese, and mix to combine. Add extra Flour if required.

Heat a generous amount of Oil in a frying pan over medium low heat, form 4 thin pancakes, and cook for 2-3 minutes OR until nicely browned and crispy, then flip over and cook the other side.
