Peel and wash the vegetables. Cut the potatoes into thick slices, the carrots into strips, and the onions in half. Place them in the baking dish you’ll use. You can add more vegetables if you like.

Add a little seasoned salt and a bit more oregano (I love the flavor it gives the vegetables), and mix well with a spatula.

Once the vegetables are ready, wash the chicken well and remove any excess fat from the skin, especially around the hips if you prefer. Make a few small cuts between the breast and thighs so the seasonings soak in better.

Place the chicken in the dish with the prepared vegetables. Season with seasoned salt, yellow mustard, and soy sauce (not too much, since soy sauce is salty and can easily make the dish too salty). Use a brush or your hands to coat the chicken well with the seasonings.

Once everything is seasoned, cover with aluminum foil so everything cooks well and the flavors blend.

Bake at 535°F (280°C) for about 1 hour and 20 minutes. Then remove the foil to let the chicken brown. Once it’s nicely browned, serve with rice, mashed potatoes, or just the vegetables cooked with the chicken—they’ll be soft and delicious.
