Steps
- 1
Wash and dry the blackberries. Using a blender, beat the berries into a homogeneous mass.
Beat the eggs with sugar until a stable foam forms. - 2
Add the berry mixture. Stir. Add the sifted flour in portions.
- 3
Pour the dough onto a baking sheet, parchment paper or silicone mat. Spread it evenly over the entire surface. Bake at 200 degrees for about 10 minutes. Check readiness with a wooden stick.
- 4
While the cookies are still hot, remove them from the paper and roll them up together with the paper. Leave to cool.
- 5
Mash the cottage cheese with a fork. Add powdered sugar and vanilla. Use a blender to turn into a smooth homogeneous mass.
- 6
Roll out the cooled sponge cake. Grease with an even layer of curd cream. Arrange the berries on top. Roll into a roll. Carefully wrap the roll in paper and put it in the refrigerator for two hours.
- 7
Decorate the finished roll as desired. You can simply sprinkle it with powdered sugar. I have butter cream.
