Wash and rinse poha lightly in a strainer till water runs clear.Strain water completely to avoid poha getting soggy.Smear turmeric powder and juice of half lemon in poha.Let it rest while you prepare rest of the ingredients.

Heat oil in a heavy bottom pan on medium high heat. Fry peanuts for 2 minutes till they are crunchy. Set aside.In the remaining oil fry the small cubed potatoes in medium-low heat until they are cooked completely. Set aside.Add mustard, cumin and fennel seeds to the oil.When they splutter, add the curry leaves and 2 chopped green chillies.Saute 1 minute.

Add chopped onion and fry till translucent.Add green peas, roasted peanuts, 1 tbsp pomegranate pearls, chopped coconut, few more green chillies, salt and sugar to taste.Saute 1 minute and add turmeric smeared poha.

Toss poha in low heat till well mixed with the vegetables. Sprinkle rest of lemon juice and toss.If the poha seems a bit dry, drizzle some water and toss.Cover and rest 2 minutes.Garnish with fresh cilantro, few chopped coconut, chopped onion and Pomegranate pearls.The sweet juices of pomegranate, the crunchiness of peanuts and lemon juice make this dish delicious.Serve poha hot in breakfast, brunch, as a snack or pack in lunch box and relish.
