Ingredients

  1. 1 call-purpose enriched wheat flour
  2. 1/2 cjowar (sorghum) flour
  3. 1/2 cupmasa Harina
  4. salt (optional)
  5. 1 tablespoonolive oil
  6. 1 1/2 cupslukewarm milk
  7. 1 teaspoonyeast
  8. For the stuffing:
  9. 1 cupgrated cheese mix
  10. Others
  11. Required Melted butter, ghee
  12. main dish  Flat bread/naan

    Prepare a checklist. Keep essential items close by
    Flat bread: prepare the dough. Check the yeast is alive and active. In a bowl, add warm milkyeast, sugar, salt. Activated yeast produces air bubbles. Add 1 tbsp of ghee or oil, flours in small amounts, mix everything together with fingers, add water if needed, you will get a sticky dough. Cover the dough with a wet towel to keep the dough moist; rest for 20 minutes. Pinch, stertch, fold. Tuck underneath. Knead to make a smooth ball.

    Then I refrigerated the dough overnight
    Take the dough out of the refrigerator. The dough has risen considerably. Dip your fingers in water. Using steretch, fold technique. Knead the dough a few times. Make a ball, apply oil and cover with a damp cloth and rest for 30 minutes. Always cover to prevent drying.
    Then roll the dough on a lightly floured chapati stone. Cut into 6, make balls and cover with a damp cloth; refrigerate for 30 minutes.

    Take out the balls from the refrigerator. ON A LIGHTLY FLOURED CHAPATHI STONE, ROLL EACH BALL TO MAKE approximately Rectangular 12” x 9”. Spread melted butter on top. Sprinkle generously with cheese. Cut 3 strips with a knife. Start at the bottom and roll the strip tight.

    Gently flatten the cheese stuffed naan with the palm of your hand and place on a floured stone and roll without pressing hard. Shape as your wish. You may sprinkle sesame seeds cchapped cilantro on the top-it is optional, Now ready for roasting on the skillet..
    Cook this in a skillet over medium heat. Transfer the flat bread to the skillet on medium heat. Small bubbles are visible at the top; Flip it after a minute. Flip again. Repeat the process two or three times..

    Press the edges with a spoon. It will puff, not as a balloon like
    pulka chappathi. After flipping once, you may also directly place the flat bread on the fire to puff

    when you cut the flat bread into 2 pieces, you will see many layers.

    Aromatic cheesy flat bread is ready to serve and share.
