Ingredients

Serves 4 servings
  1. 1eggplant, cut into cubes with skin on
  2. 2potatoes, peeled and cut into cubes
  3. 2pita breads, cut into cubes and toasted
  4. For the red sauce:
  5. 2 tablespoonsoil
  6. 1 teaspoonminced garlic
  7. 1 teaspoonchili paste
  8. 2 tablespoonsvinegar
  9. Pinchsugar
  10. Pinchsalt and pepper
  11. For the white sauce:
  12. 2small containers plain yogurt
  13. 3 tablespoonsmayonnaise
  14. 1 clovegarlic, minced
  15. Pinchsalt and pepper
  16. For topping:
  17. Roasted peanuts
  18. Pomegranate seeds
  19. Chopped parsley

30 minutes
  1. 1

    Sprinkle the eggplant cubes with a little salt to draw out moisture.

    Fry the eggplant in oil until golden.

    Layer the toasted pita cubes in a dish, then top with the eggplant and potatoes.

    Mix together the ingredients for the white sauce.

    For the red sauce, sauté the garlic and chili paste in oil, then add vinegar, followed by strained tomatoes, salt, and pepper. Cook until thickened.

    Drizzle both the white and red sauces over the dish in lines, then garnish with parsley, pomegranate seeds, and roasted peanuts.
