In a pressure cooker, heat 2 tablespoons of olive oil. Add the chicken leg quarters and the sliced onion. Brown the chicken for about 10 minutes on each side (more or less depending on the size) until well browned.

Meanwhile, peel and thinly slice the cabbage.

Add the smoked bacon and sliced cabbage to the pressure cooker. Cook over medium heat for a few minutes, placing the chicken pieces on top. Then add 3 1/4 cups water (750 ml), the crumbled chicken bouillon cube, 1 1/2 cups long-grain rice (about 300 grams), salt, and pepper. Mix well, keeping the chicken on top, and set the cooker to program 3 for 7 minutes.

Once the program is finished, check the seasoning and adjust if needed.
