Chili for my Dad, with Pablano Peppers

This chili I used pablano peppers in it. I usually like hatch, jalapeno, or cayenne peppers in it. This chili I made for my Dad, he is not doing so good these days. He cannot eat spicy food and he love beans in his chili. He ate a whole bowl full of this recipe with some cornbread!!!! 😁 Happy Days!!!

Chili for my Dad, with Pablano Peppers

Ingredients

  1. 3-1/2 poundsground chuck
  2. 1 poundpork bulk sausage (the one in the tube)
  3. 4 cupsdiced pablano peppers (2 large whole peppers)
  4. 3 cupsdiced onion 1/2 cup of this reserved (topping)
  5. 15 ouncesred beans
  6. 15 ouncesdark red kidney beans
  7. 15 ounceslight red kidney beans
  8. 15 ouncespinto beans
  9. 30 ouncestomato sauce
  10. 8 ouncestomato paste
  11. 30 ouncesdiced tomatoes
  12. 1 tablespoonground cumin
  13. 1/4 cupdried cilantro
  14. 2 teaspoonsgranulated garlic powder
  15. 2 teaspoonssalt
  16. 1/3 cupbalsamic vinegar
  17. 1/3 cuphoney
  18. 8 ounceshot water
  19. 1 teaspoonground black water

Cooking Instructions

    Dice the onions.

    Dice the pablano peppers. Mix with the onion and get to room temperature. I refrigerate the onions and peppers, it makes them easier to dice.

    Start browning the chuck and sausage. Add the spices and herbs. Add in the balsamic vinegar. Break the meat up and add the peppers and onions.

    Cover and the juices of the onion and pepper will release. Do this for about 15 minutes.

    Drain the beans and add to the pot. If you don't want beans omit them. Add the diced tomatoes, and tomato sauce. Mix the tomato paste with the hot water and add. Stir in the honey. Taste and adjust the flavor.

    Serve with the reserved onion on top. Feel free to add shredded cheese, nacho cheese, sour cream, serve on top of hamburger, hotdog, or sausage sandwiches. I hope you enjoy!!!
