Ingredients

  1. 1skate wing fillet
  2. 1white vinegar
  3. 1carrot, 1 onion, thyme, bay leaf for poaching
  4. Toppings
  5. 1 headcurly endive (frisée) lettuce
  6. 1pink peppercorns
  7. 1whole black peppercorns
  8. 1 tablespoonchopped chives
  9. Mustard Vinaigrette (about 3/4 cup / 200 ml)
  10. 3 tablespoonsdistilled white vinegar (50 ml)
  11. 2/3 cupneutral oil (such as canola or vegetable oil) (150 ml)
  12. 1 teaspoonsalt
  13. 1 teaspoonblack pepper
  14. 2heaping teaspoons traditional or whole grain mustard

Steps

  1. 1

    Soak the skate wing in water with white vinegar for 15 minutes.

  2. 2

    Wash and prepare the curly endive lettuce.

  3. 3

    Cook the skate wing by poaching it in a broth with the vegetables and herbs or by steaming for 15 minutes.

  4. 4

    Arrange the lettuce on a plate and drizzle with a little vinaigrette. Flake the warm skate wing over the top.

  5. 5

    Crush the pink peppercorns and black peppercorns, then sprinkle them over the salad. Add more vinaigrette and the chopped chives. Serve immediately.
