Warm Skate Wing Salad with Pink Peppercorns and Cracked Black Pepper

Soak the skate wing in water with white vinegar for 15 minutes.

Wash and prepare the curly endive lettuce.

Cook the skate wing by poaching it in a broth with the vegetables and herbs or by steaming for 15 minutes.

Arrange the lettuce on a plate and drizzle with a little vinaigrette. Flake the warm skate wing over the top.

Crush the pink peppercorns and black peppercorns, then sprinkle them over the salad. Add more vinaigrette and the chopped chives. Serve immediately.
