Combine methi leaves, oil and spices very well. Squeeze methi while mixing so that it releases moisture with flavour and gets soft. This step also helps to blend the spices well. Stop when methi releases moisture and looks soft as if cooked. Add flour and combine well. You can taste and adjust the spices at this point. Combine everything well.

Add a little water at a time and make stiff dough (a little stiffer than for bhakhri). Cover it and let it rest for at least 30 min. Knead a bit and make 6 equal portions of balls. Make them flat and roll like bhakhri. Make criss cross cuts.

Fry the in moderately hot oil on medium to low heat while stirring continuously. Fry till they get crisp and golden brown.
