Combines mushrooms,carrot, and cashew for a delicious and speedy alternative burger. Gluten free and vegan.
Steps

Grate, slice and cook carrots on hob until softened. Mash and set aside.

Roughly chop mushrooms and onion. Fry until softened. Add garlic for 1 minute then add to carrots and set aside.

Roughly chop nuts. Add to pan, on a low heat allowance to slightly brown. Watch carefully to prevent burning. Remove from heat, allow to cool.

Peel and grate apple. Add to other ingredients.

Add chilli and herbs. Season to taste. Add flour and oats and mix well.

In a frying pan, add drizzle of oil and scoop of mixture. Flatten to shape. Fry on a low heat until golden then turn over and repeat.

Serve with gluten free bread or as desired. Can be stored in the fridge for several days and reheated in the oven or air fryer, or on the hob or eaten cold.
