A super quick, easy and economical way to make aduki "an" bean paste for Japanese wagashi sweets.

Ingredients

30 minutes
  1. 2x tinned cooked aduki beans in water
  2. 180 gsoft muscovado (or any sugar)
  3. 1/8 tsp salt

    Open the tins of aduki beans and drain water.

    Tip the beans in a heavy bottomed pan. Add the sugar and simmer on medium heat.

    When the sugar melts, it gets watery. Stir every now and then, squashing some beans. Careful not to splash as it is hot.

    When the paste stays apart after you drew a line with the spatula, mix in the salt. Add more sugar if required to adjust sweetness to your liking and bean paste is done. Loosely cover it and let it cool down.
