Dorayaki (Red Bean Paste Pancakes)

I wanted to use up frozen sweet bean paste, which I had made previously. I wanted to make dorayaki that has an old fashioned taste.

The best way to cook the pancakes is to heat the electric griddle to high, cool down with a wet cloth, and cook over low heat. Cook the pancakes well until you can see bubbles rise to the surface. Cook the other side until the surface is light brown.
The result is better if you use an electrical griddle rather than a frying pan. For 6-8 servings. Recipe by Pront18

Ingredients

6 servings
  1. 2Egg (medium)
  2. 100 gramsSugar (soft light brown sugar if available)
  3. 1 tbspHoney
  4. 1 tbspMirin
  5. 130 gramsCake flour
  6. 3 tbspWater
  7. 300 gramsBoiled azuki beans
  8. 1===== If using baking soda
  9. 1/4 tsp◎Bicarbonate of soda (baking soda)
  10. 2 tbsp◎Water
  11. 1===== If using baking powder
  12. 1 tsp※Baking powder
  13. 80 mlin addition ※Water

Steps

    Beat eggs in a bowl. Add sugar and honey and mix well with a whisk. Dissolve the baking soda in 2 tablespoons of water and add to the bowl.

    Add cake flour to the bowl. Use a spatula to cut the batter from the bottom.

    Cover with cling film and rest the mixture for 30 minutes at room temperature.

    Add water to adjust the batter consistency.

    Heat an electric griddle to 355ºF/180ºC and spread a wet cloth to cool. Set the electric griddle at 320ºF/160ºC and pour in the batter to form circles. Flip over when the surface is full of bubbles.

    Flip over and press the edge of the pancakes lightly with a spatula to shape the pancakes nicely. It only takes 10-20 seconds to cook this side.

    Cover the pancakes with a damp cloth to prevent drying out and to keep them nice and moist.

    Smear the adzuki beans in the centre of a pancake. Sandwich with another pancake on top, wrap in cling film and you're done.
