First, dissolve the sugar in a bowl of water by stirring until fully melted. In a large mixing bowl, combine both flours. Add the ghee and mix until the mixture is crumbly. Pour in the sugar water and add the salt.

Mix everything well to form a soft dough. Let the dough rest for 30 minutes, then roll it out into thick discs.

Cut the rolled dough into small diamond or square shapes for shakkarpare. Fry them in hot oil over low heat until they are crispy and golden brown.
