Ingredients

Makes 18-20 medium cheese pies
  1. 4 cupsall-purpose flour (about 500 grams)
  2. 1 packetbaking powder
  3. 1/2 teaspoonsalt
  4. 1egg yolk
  5. 1 containerplain yogurt (about 7 ounces or 200 grams)
  6. 1/2 containerolive oil (about 3.5 ounces or 100 grams)
  7. 9 tablespoonsunsalted butter (about 125 grams)
  8. Filling
  9. 10 1/2 ouncesfeta cheese (about 300 grams)
  10. 7 ouncescream cheese (about 200 grams)
  11. 2 sprigsfresh mint
  12. 1egg for brushing

Steps

    Combine all the dough ingredients in the bowl of a stand mixer or a large mixing bowl if kneading by hand. Add the butter last and knead until the dough comes together.

    Mix all the filling ingredients together (I also added a handful of mixed yellow cheeses).

    Divide the dough into 18-20 pieces and roll each into a round sheet. Add the filling, fold over, and trim the edges with a pizza cutter.

    Seal the edges tightly with a fork as shown in the video.

    Place on a baking sheet and, without waiting, brush with beaten egg. If you like, sprinkle sesame seeds on top.

    Bake in a preheated oven at 350-375°F (180-190°C) with convection for 20 minutes. The cheese pies are ready to eat or store in the freezer (after they have cooled).
