Chewy chocolate chip cookies

Ingredients

  1. 100 gramsbutter, soft
  2. 90 gramsagave
  3. 1large egg
  4. 1 tspvanilla
  5. 220 gramsalmond flour
  6. 1 tbspcornflour
  7. 1/2 tspbaking powder
  8. 1/2 tspsalt
  9. 150 gramschocolate chips

Cooking Instructions

  1. 1

    Mix the butter and agave until smooth

  2. 2

    Add the egg and vanilla extract, mix until combined

  3. 3

    Add the dry ingredients and mix until combined

  4. 4

    Cover and refrigerate for at least 20 minutes (don’t refrigerate for more than an hour)

  5. 5

    Bake at 180c for 13-18 minutes until slightly golden

  6. 6

    Leave to rest for 20 minutes until they firm up. They should still be soft when pulled from the oven
