Prepare the ingredients.

Wash the vegetables. Cut off the tops of the bell peppers and drain the corn.

Rub the chicken breast with salt and black pepper. Add enough water to cover the chicken and let it soak for 2 hours.

Fill a small pot halfway with water. Bring to a boil, add a pinch of salt, then add the chicken breast. Once it returns to a boil, reduce to low heat and simmer for 3 minutes.

Turn off the heat, cover the pot, and let the chicken sit for 15 minutes. Remove and dice the chicken.

Preheat the oven to 350°F (about 180°C).

Fill the bell peppers with diced chicken and corn.

Sprinkle with shredded cheese as desired.

Add more chicken, corn, and shredded cheese to fill the peppers.

Top each pepper with a cheese slice, then bake in the oven for 15 minutes.

Remove from the oven when done baking.
