Mutton Dum Biryani - Dindukal Style

Take all the needed ingredients. 3/4kilo rice =3cup rice. So for normal rice,we need (2 cup water for 1cup rice) 6cup of water. Now here, for basmathi or seeraga samba rice,it's enough to add 5 cups of water.

Roast masala 2 ingredients to grind nicely.once it cools grind it.

Grind masala 2 ingredients.
Make tomato puree. - 4
In a cooker add mutton pieces,and other ingredients given in the list and add 1 cup water,close the lid and wait for 5 whistle.

Soak rice for 30mts and strain the water and keep aside.
In a heavy bottom pan add ghee,oil and add masala 1 paste,saute until the oil separated. - 6
Then add chilli powder and grinded masala1, one by one and mix well. Add salt. Then tomato puree. Cook well then add curd and mix well.

Next add boiled mutton and mix well. Frequently open the lid and mix,then only the masala cost on the pieces.

Now,add remaining 4 classes of water(mutton stock and water). Then close the lid and boil it. Once it boils add rice and mix well. Add salt,if needed. Again close the lid and cook.

Once it boils add lemon juice and mix,keep the flame on low and cook. Within 13mts the rice cooked 3/4th consistency. Then keep on eye on it. So that it won't stick on the bottom.

Now see here,rice absorbed all the water,it's the perfect time to keep on dum. Sprinkle mint leaves and place a banana leaf on the top and close the lid.

Now,place dosa tawa on the small burner,keep the flame low and place Biryani pot on the tawa. To makesure not leaving tthe pressure keep some weight on the lid. Keep it that around 25mts. Then turn off the stove and serve after 15mts.

That's all. Our Mutton Dum Biriyani is ready to serve.
