Add water to a pot on high flame and bring 1 boil, break the Noodles and add it. Add pich of salt and 1 tsp oil. Cook till Noodles becomes soft.strain water, keep it aside.

For Thukpa, wash and chopped ginger, garlic, chillies, fresh green coriander, onion sliced, green yellow capsicum, cabbage, carrot,beans, broccoli, tomato.

For vegetable stock boil 1.5 litre water, add cut carrot, potato, beetroot, bottle gourd, green coriander stalk. Add bay leaf, peppercorns and salt.Boil for 15 minutes. Strain and keep aside.

Heat oil in a kadai. Add chopped ginger garlic, green chillies Saute it well.

Add sliced onion and all chopped vegetables.

Add tomato, add salt and give a nice mix.

For momo chutney, roast tomatoes, garlic on grill stand, peel tomatoes.In a chopper add roasted tomatoes, soaked red chilli green coriander, spring onion, green chillies, 1 tsp chopped garlic, pinch of sugar, lime juice and salt as per taste. Make corase chutney.

When all vegetables half cooked add turmeric powder, red chilli powder, cumin powder, graram masala, pepper powder, chilli flakes, mix herbs.

Add vegetable stock, soya sauce.

Stir well and Cook for 3 minutes.Finish by adding 1 tsp lemon juice, fresh coriander.

Vegetable Thukpa soup is ready, serve with cooked noodles and momo chutney.
