Steps

Wash the spinach and in a wok heat olive oil, add the spinach and cover to cook for 10 mins on medium heat

Add salt and let water evaporate, set aside and cut into small pieces when cooled

In a bowl add the spinach, add ricotta cheese, egg, flour, parmigiano reggiano, salt and nutmeg powder, mix to form balls

Coat with flour and set aside

In a wok in salted boiling water add the Gnudi and boil for 5 mins, when it floats up, it’s ready, set aside

In a wok melt butter add sage and the Gnudi, coat well, set aside
- 7
Plate with grated parmigiano reggiano and enjoy 😊
