Inspired by Austrian yummy times on the slopes! Traditionally use leftover potatoes and meat.

If you don't have lefover potatoes, boil till cooked through (don't overcook!). Leave to cool/dry, ideally overnight.

Chop the meat, herbs, garlic and onions. Half or quarter the potatoes and cut into 3/4 cm thick slices.

Cook in a large cast iron pan, Balti pan or frying pan. Fry the potatoes in the oil untill crispy/browned (you may need to do this in batches). Set potatoes aside.

If using raw meat, fry in the oil for 5 minutes (if using cooked meat, add with onions). Add onions and fry till browned (8 mins). Stir in the chopped garlic.

Add the butter and herbs, stir through. Add the fried potatoes, spices, seasoning. Start trying the eggs in a separate pan! Heat Grostyl through for 10 minutes.

Serve Grostyl topped with seasoned fried eggs.
Tips
If using non waxy potatoes, it is best to fry them raw (so they don't desintigrate).
