Lau Ghonto or Bottle Gourd ( Lauki) Curry is a tasty and healthy curry and can be prepared in various ways.This is a pure veg recipe without any onion or garlic. Addition of dal bori or dry lentil dumplings and green peas make this curry flavourful. Serve this tasty curry as a side with steamed rice and dal in lunch or dinner.

Peel and slice lauki into 4 pieces.Then slice into matchstick pieces.Add 2 tbsp mustard oil in a pan.Once the oil is heated, fry the dry lentil dumplings or bori to light brown. Set aside.

Sprinkle the tempering of cumin, fennel and fenugreek seeds. When they splutter, lower flame and add ginger paste.Saute for 30 seconds and add the chopped bottle gourd.Add turmeric, cumin and red chilli powder, bay leaf, salt and sugar to taste.Sprinkle 1/4 cup water,cover and cook on low flame for 5 minutes. When the vegetable starts releasing water, add the fried lentil dumplings. Cover and cook on medium flame flame till moisture dries up completely. Sprinkle 1 tsp ghee and chopped coriander.

Toss to mix well.Garnish with slit green and red chillies and serve hot as a side with steamed rice and dal in lunch or dinner.
