Short Rib Lentil Soup

Soak the lentils and let sit for 30 minutes. Drain

Heat oil in a shallow pan over medium-high heat. Season the ribs with salt and pepper and brown on all sides and set aside

In the same pot, sauté the garlic until fragrant, then return the browned ribs to the pot. Add the stock, tomato, onion, lentils, oregano and basil (if using)

Bring to a boil then lower and simmer partially covered for 1 hour or until the lentils and ribs are tender

Serve warm and enjoy 😉
