Roasted Sweet Potato and Onion (Great accompaniment for soups!)

This roast is just some scrumptious !! And how you can eat it is such a wide range. Eat with thick veg soup, pasta and pasta sauce or plain with humous. If you roast other vegetables such as tomatoes and garlic, you could blend it into with other ingredient to make soup! Make sure to save some vegetables whole to sprinkle on!

Have the tray in the oven on 200 degrees C while getting everything ready.

Cut the onions and sweet potatoes as in the picture

Take the tray out of the oven (it should be hot) and melt the oil in it.

Put all the seasoning in the oil and mix. Make should the stock is mashed properly mixed.

Mix in the sweet potato and onions thoroughly in the seasoned oil. If you use frozen sweet potatoes and the oil freezes, put it into the oven for awhile then mix it through again.

Bake for 1hour stirring every 15-20min.

Enjoy with many of your savoury meals and as a topping for thick vegetable soup.
