Ingredients

1hr 30mins (less if you wash and chop before time)

  • Main ingredients
  • 1 kg/ /7 large chopped sweet potato (we used frozen the first time)
  • 2medium onions/ 1 small and 1 large
  • 2heaped tablespoons coconut oil (you may need more if using liquid oil)
  • Seasonings
  • 1/2 teaspoonssalt
  • 1/4full salt stock cube
  • 1 tablespooncurry powder
  • 1/2 teaspoonblack pepper
  • 1 teaspoonsmoked paprika
  • 1 teaspoongarlic powder
  • 1/2 teaspoononion powder
  • Equipment
  • Large baking tray
  • Chopping board
  • Sharpe knife
  • Chip turner
  • Measuring cup and spoons

Steps

1hr 30mins (less if you wash and chop before time)
  1. 1

    Have the tray in the oven on 200 degrees C while getting everything ready.

    Cut the onions and sweet potatoes as in the picture

    Take the tray out of the oven (it should be hot) and melt the oil in it.

  4. 4

    Put all the seasoning in the oil and mix. Make should the stock is mashed properly mixed.

    Mix in the sweet potato and onions thoroughly in the seasoned oil. If you use frozen sweet potatoes and the oil freezes, put it into the oven for awhile then mix it through again.

    Bake for 1hour stirring every 15-20min.

  7. 7

    Enjoy with many of your savoury meals and as a topping for thick vegetable soup.
