Soy Beans are a powerhouse of energy, protein, vitamins and essential nutrients. Edmame or green soy beans are eaten light cooked as a snack or in salad. I have given a twist and made them Indian style by adding spices. It is a good side dish in your hungry pangs.

Heat a pan. Add cumin seeds, chopped green chillies, ginger garlic paste and saute well for 1/2 a minute.

Add the washed Edmame (soy beans). Saute for 1 minute. Then add 2 tablespoons water, rest of the spices, cover and cook for 5 minutes till soft. Take off from heat, mix in the lemon juice. Adjust the seasonings.

Serve as a side or salad and enjoy.
