Ingredients

  1. 1 cupcouscous (about 170 grams)
  2. 2 tablespoonsoil
  3. 1 tablespoonsalt
  4. 3 cupswater (about 710 ml)
  5. 1 cuptomatoes (about 180 grams)
  6. 1onion
  7. 1 tablespoonoil
  8. Salt and pepper
  9. 1 teaspoonturmeric and paprika
  10. 1 tablespoonmixed spices
  11. 1potato
  12. 1/2 cupchickpeas, corn, and fava beans (about 80 grams total)
  13. Lentils and chickpeas

Steps

  1. 1

    Add the water, salt, and oil to the couscous. Cook over low heat until the couscous is tender.

    Sauté the onion in oil until soft.

    Add the tomato sauce and spices, and cook until the sauce thickens.

    Add the chickpeas, corn, and fava beans.

    Add the potato and cooked lentils.

    Add the leeks, then transfer everything to a serving dish.
