First upon peel and grate the lauki leaving behind the seeds. else dudhi halwa doesn’t taste good.

Now heat ghee and roast cashew, almond and raisins, Roast the nuts to golden brown and keep aside.

Now add in grated lauki and saute for 5 minutes. Saute till the lauki shrinks slightly and changes colour.

Then add in fresh milk malai and hot milk and mix well. Cook for 10 minutes or till milk thickens and lauki gets cooked completely.

Now reduce the gas flame and add sugar and crushed cardamom powder to it, add green food color to it and cook till the sugar melts and boil for 5 minutes or till it thickens.

Now add roasted dry fruits to this and mix well. Then cook the halwa stirring constantly till the mixture leaves the pan. Now add 1/2 teaspoon of ghee on top and mix to make the texture of this halwa shining.

Now our very Delicious and healthy Lauki Halwa is ready for serve. Garnish with roasted almond, cashew nuts and raisins.
