Make pho quickly for breakfast by simmering the broth with pork bones, a bit of cinnamon, star anise, and a pho spice packet. That’s all you need for a delicious bowl of rare beef pho.

Soak the pork bones in salted water, then rinse thoroughly. Blanch the bones in boiling water, then transfer to a pot with 10 1/2 cups water (2.5 liters) and simmer. Toast the cinnamon and star anise in a pan until fragrant, then place them in a spice bag and add to the pot with the bones.

Simmer for about 30 minutes. Add the onion, cilantro roots, and pho spice packet. Season to taste. Add the beef meatballs to the broth.

Blanch the rice noodles and place them in bowls. Dip the sliced beef into the hot broth until just rare, then add to the bowls. Ladle hot broth over the top. Garnish with black pepper and green onions. Serve with blanched bean sprouts, fresh herbs, hoisin sauce, and chili sauce.
