First, transfer the washed methi leaves in a bowl. Add salt and mix well. Keep covered for 5 minutes. Then squeeze out the bitter water and chop the leaves finely.

In the same bowl, add methi leaves, wheat flour, besan, all spices, red chilli pickle, (I had very little left at home😋) coriander leaves, tomato puree, yoghurt and mix well. Add oil and knead the dough using water gradually. The dough should be tight and not loose. Rest it covered for 10 minutes.

In the meantime, heat a tawa. After resting the dough, make lemon sized balls of the dough, roll thin into round shapes, and roast them using oil to golden brown on both sides.

Serve with mango pickle, yoghurt, vegetable raita, chutney or curry. Enjoy!
