Take methi and bathua leaves in a bowl and wash well with water.

Boil potatoes and keep aside.

Boil water in a pan and put leaves in it. Boil for 5 minutes.

Remove leaves from water and keep aside.

Take flour in a big mixing bowl and add salt, oil and spices.

Add boiled and mashed potatoes and boiled leaves. Mix well

Knead a soft dough and make medium size balls from it.

Roll out like chapati from rolling pin. Apply oil from spoon and fold in square shape.

Heat a tawa and cook these parathas with applying ghee on it.

Cook well from both sides till golden in colour.

Serve these hot methi and bathua parathas with aloo tamatar gravy.
