Preheat the oven to 375°F (190°C).
Roll out the pie crust on a lightly floured surface. Place it in your tart pan or pie dish. I used a silicone mold.
Prick the base several times with a fork.

Line the crust with parchment paper and fill with dried beans or chickpeas to weigh it down. If you don’t have enough, you can use a small, oven-safe dish that isn’t too heavy.

Bake the crust for 15 minutes.

Meanwhile, in a bowl, mix the butter with the superfine sugar or stevia.
Crack in the eggs and add them to the mixture. Stir in the warmed honey (make sure it’s not hard or cold), the lemon zest, and lemon juice. Mix well.
Add the pine nuts and walnuts. For the walnuts, wrap them in a towel and crush them into pieces with a rolling pin or mallet. You can leave them in larger chunks or chop them finer, as you prefer.

Mix everything well. Once the crust has baked for 15 minutes, remove it from the oven, take out the beans and parchment paper (be careful, it’s hot), pour in the nut and honey mixture, and bake for about 40 more minutes. Keep an eye on it until the tart is set and golden.

Remove the tart from the oven and let it cool for 10 minutes before serving.
