Ingredients

Makes 50 servings
  1. 1 1/4 cupsolive oil (300 ml)
  2. 1 1/4 cupssunflower oil (300 ml)
  3. 1/4 cuprum or brandy (60 ml)
  4. 1 1/4 cupsfinely chopped walnuts (150 grams) + 1/3 to 1/2 cup extra for topping (50-70 grams), grated or processed
  5. 3/4 cuporange juice (180 ml)
  6. Zest from 2 oranges, grated
  7. 1 cuppowdered sugar or regular sugar, processed until fine (220 grams)
  8. 1 teaspoonbaking soda
  9. 1 teaspoonground cinnamon
  10. 1 teaspoonground cloves
  11. 8 cupsall-purpose flour, approximately (1 kilogram)
  12. 2 teaspoonsbaking powder
  13. 1 packetvanilla (or 2 teaspoons vanilla extract)
  14. For the syrup
  15. 4 1/4 cupswater (1 liter)
  16. 1 1/4 cupshoney (300 ml)
  17. 3/4 cupsugar (150 grams)
  18. 1 teaspoonground cinnamon
  19. Peel from 1 orange, washed
  20. 1 packetvanilla (or 2 teaspoons vanilla extract)

    Start by making the syrup. Combine all the syrup ingredients in a pot and bring to a boil. Once it boils, remove from heat and set aside.

    In a large bowl, mix the olive oil, sunflower oil, and sugar together well. Add the cinnamon, cloves, and orange zest, and mix again.

    In a separate bowl, combine the orange juice and baking soda. It will foam up a lot. Pour this mixture into the oil mixture and stir. Once the foam settles a bit, add the walnuts, then gradually add the flour and baking powder, mixing slowly until you have a soft, pliable dough.

    Shape the dough into oval cookies (melomakarona) and place them on a baking sheet, leaving some space between them as they will expand. Bake at 350°F (180°C) with the oven set to convection (fan) for about 7-13 minutes, depending on your oven. After baking, dip the cookies in the syrup, count to 10, then remove and sprinkle the extra grated walnuts on top.
